Phoenix Pop recommended meals: Grilled Stuffed Zucchini

I think my favorite part of camping is being able to spend time with family and friends and be able to have a nice meal. I found this recipe surfing around the web and it is absolutely delicious.  Give it a try you can add your own spin to it by changing the ingredients to better suit your taste.

You will need:

2 large zucchini

2 lbs hot Italian sausage

2 lbs ground beef

Mushrooms (diced)

Green Peppers (diced)

Onion (diced)

Mozzarella Cheese

Cottage Cheese

Half a can of Tomato Soup

 

Zucchini:

Slice the zucchini in half and scoop the center part, it should look like a boat.

Filling:

Brown the ground beef and chorizo mixture, once it is cooked add the cottage cheese and let it blend in. Add the onions and peppers and let it cook for 10 mins. Add the mozzarella cheese, mushrooms and tomatoes. Let it steam for about 5 mins.

Grilling:

Put the filling into the zucchini boats, and add some mozzarella cheese on top so it melts while grilling. You can place the zucchini on a tray or directly on the grill. Grill in medium high heat for 15 to 20 mins.
